Brand Story & Vision

Rather than recreating tradition, we reinterpret it.

Georgian cuisine has been shaped over generations by stories, rituals and craftsmanship. Sesilya sets out to reveal them — not to explain Georgia, but to make guests curious about it.

The identity moves away from predictable representations of Georgian culture. Instead of familiar clichés, it builds a distinctive language drawn from folklore, mythology, craftsmanship and the narratives that define Georgian identity. Our deep connection to Georgia's winemaking heritage is embraced through the space itself, where wine plays a central role in the guest experience.

The result is timeless, contemporary, and deeply rooted in culture — allowing tradition to be discovered rather than simply displayed.
